BRUSSELS’ SPROUTS WITH LEEKS & CHILLI

Serves 2
200g Brussels sprouts
2 medium sized or 4 small leeks
Half a red chilli, chopped
1-2 cloves of garlic, crushed
2tbs Olive oil
Vegetable or chicken stock
Firstly prepare the sprouts. You need to discard the any discoloured leaves and bits of stalk. Then you need to chop the sprouts, so that you end up with what looks like dolls’ sized cabbage.
Heat the oil in a large frying pan. Add the leeks, garlic and chilli and cook gently until the leeks are softened. Now add the chopped sprouts and enough stock to just cover the sprouts. Bring to the boil and simmer for about 10 minutes until the sprouts are cooked.
If you like bacon with sprouts, you can chop up about 4 rashers of bacon and add that to the olive oil, cooking before you add the leeks, chilli and garlic. You can also add chestnuts to this dish. Chop up some pre-cooked chestnuts and add about 5 minutes before the end of cooking time so that they get heated through, but do not crumble.
